Cucumber Prosecco Spritzer

This cucumber prosecco spritz is the cocktail of the summer! Refreshing cucumber syrup, chilled prosecco and extra bubbles over ice with lots of lime. Delicious and cooling!

Ingredients

cucumber syrup

  • 4 mini cucumbers, cut into pieces
  • ½ cup water
  • ¾ cup sugar

spritzer

  • 1 to 2 ounces cucumber syrup
  • ½ ounce lime juice
  • 4 ounces prosecco, or your favorite white wine
  • 1 to 2 ounces cub soda
  • cucumber spears, for garnish
  • lime wedges, for garnish

Instructions

  • Place the cucumbers and ¼ cup of water in a blender. Puree until smooth and no chunks remaining. Pour the mixture into a saucepan and add the sugar and remaining water. Bring the mixture to a light simmer, whisking so the sugar dissolves. Turn off the heat.
  • Strain the mixture through a fine mesh strained at least once, maybe twice, to remove any extra bits. Pour the remaining cucumber syrup into a jar and store in the fridge for a few days.

spritzer

  • Fill a glass with crushed ice. Mix the cucumber syrup and lime juice in the bottom of the glass. Top with the prosecco or white wine. Top with the club soda. Garnish with the cucumber spear and limes. Taste and add more or less of anything you feel it needs, according to your own taste!
