This bruschetta salmon is an easy and versatile weeknight meal. Seared salmon drizzled with syrupy balsamic glaze and topped with diced tomatoes, garlic and fresh basil tastes like summer. Serve with your favorite side dish for a simple dinner!
In a bowl, stir together the tomatoes, basil, garlic and a big pinch of salt and pepper. Add ½ tablespoon of olive oil and toss well. Set aside.
Pat the salmon dry with paper towels. Season the salmon all over with the salt, pepper, italian seasoning and garlic powder.
Heat the remaining 1 tablespoon olive oil in a large skillet over medium heat. Once hot, add the salmon in a single layer. Cook until golden on the bottom, about 2 to 3 minutes. Gently flip and cook until it’s golden brown on the other side and cooked through. It will easily flake with a fork.
Once the salmon is cooked through, drizzle the balsamic glaze on top. Remove from the pan. Top the salmon with the bruschetta mixture and serve immediately.
